Perfect Seasoning For Grown Folks Chicken Rinse chicken with cool water , pat dry , sprinkle seasoning generously on all sides . Cover your chicken for no less than one hour ( overnight is the best for flavor) , one hour into marinating add one cup of buttermilk. Let the buttermilk and seasonings marinate for an additional 30 minutes. 


Take each piece and coat in flour , then dip back in the milk and seasoning mixture, then back in the flour . Place double dipped meat on a clean plate while your oil ( butter flavored crisscross is best) heats to 350 degrees. Fry until golden brown and then drain on paper towel and then enjoy.

 Brush your seafood with olive oil and season generously 
Once seasoned allow seasoning to rest on the seafood for 15 minutes , broil each fish according to its requirements (no more than than 13 minutes).

Blackening Seasoning

The perfect blend of spices that add flavor that you will savor .
 The first step to perfectly blackened meat or fish is an evenly heated cast iron skillet. Lightly drizzle olive oil on both sides of your favorite fish , other seafood ,chicken or pork chops ; then generously add Black as Midnight and put your seasoned meat or seafood back in the refrigerator for 25 minutes.
Handle with care when removing your skillet from the oven as it will be extremely hot (never use a wet towel to move a hot skillet.) Add  one teaspoon of olive oil , then add your meat or seafood . Place back in the oven and flip half way through cook time .
Plate and present to your family and friends for the best blackened meat or seafood they have ever had.

Grown Folks Chicken -N-Waffles


Chef Tam has taken years to perfect the seasoning for her fried chicken. She has no-doubt become famous for her highly addictive grown folks chicken along with the vanilla caramel waffles that compliment her chicken. Her Soul Food Duo's allow you to experience two fo her favorite recipes at home with your family.  Celebrities love it , customers crave it and her family always request it. Chef Tam's special recipe for her spicy Grown Folks Chicken will have you licking your fingers and craving for more . Chef Tam's love for great food brings together your two favorites for this amazing soul food duo. 


Directions Chicken  : Rinse eight to twelve chicken wings and  sprinkle seasoning pac, then cover with two cups of cold butter milk , cover and refrigerate for at least two hours or over night ( Chef Tam's suggestion )  . After at least two hours place two cups of flour in deep mixing bowl and dredge each wing in flour and then dip back in milk and repeat dredging in flour and then Deep Fry in 350 degree vegetable or ( Chef Tam's favorite ) butter flavored shortening until crispy golden finally drain on paper towel.


Directions  Waffles : Stir all mix together with 1 1/2 cups cold water, 2 tablespoons melted butter and 1 egg . Don't over mix , it will be slightly lumpy. Pour batter into a lightly greased and preheated waffle iron , about 4 -5 Minutes until golden brown.


Serve our wonderfully fried chicken wings atop your carmel vanilla waffle and with your favorite syrup and let the Soul Food Duo change the way your family eats.

Chef Tam's special recipe for her Savory Old Fashion Grits with Bayou Seasoned Shrimp is a soul food staple for the Bayou lover in you . The flavorful seasoning for the shrimp makes the perfect mate for our silky savory grits . Directions Grits :  Bring two cups of water and two cups of milk to a rolling boil, then add grits along with two table spoons of butter , reduce heat to low , cover and cook for 15 to 20 minutes, be sure to stir occasionally . While grits are cooking , rinse one to two pounds of shrimp ( peeled, deveined with tail on) , drizzle with olive oil and then sprinkle entire seasoning pack and coat shrimp ,  heat a medium non stick skillet, melt one half stick of butter add shrimp cook on medium heat until pink.  Add Grits to serving plate and add cooked shrimp , for a delicious meal that your family will most definitely want more of.


Tip for thicker Grits decrease water for thinner grits increase water.
