Perfect Seasoning For Grown Folks Chicken Rinse chicken with cool water , pat dry , sprinkle seasoning generously on all sides . Cover your chicken for no less than one hour ( overnight is the best for flavor) , one hour into marinating add one cup of buttermilk. Let the buttermilk and seasonings marinate for an additional 30 minutes.
Take each piece and coat in flour , then dip back in the milk and seasoning mixture, then back in the flour . Place double dipped meat on a clean plate while your oil ( butter flavored crisscross is best) heats to 350 degrees. Fry until golden brown and then drain on paper towel and then enjoy.

The first step to perfectly blackened meat or fish is an evenly heated cast iron skillet. Lightly drizzle olive oil on both sides of your favorite fish , other seafood ,chicken or pork chops ; then generously add Black as Midnight and put your seasoned meat or seafood back in the refrigerator for 25 minutes.
Handle with care when removing your skillet from the oven as it will be extremely hot (never use a wet towel to move a hot skillet.) Add one teaspoon of olive oil , then add your meat or seafood . Place back in the oven and flip half way through cook time .

Directions Chicken : Rinse eight to twelve chicken wings and sprinkle seasoning pac, then cover with two cups of cold butter milk , cover and refrigerate for at least two hours or over night ( Chef Tam's suggestion ) . After at least two hours place two cups of flour in deep mixing bowl and dredge each wing in flour and then dip back in milk and repeat dredging in flour and then Deep Fry in 350 degree vegetable or ( Chef Tam's favorite ) butter flavored shortening until crispy golden finally drain on paper towel.
Directions Waffles : Stir all mix together with 1 1/2 cups cold water, 2 tablespoons melted butter and 1 egg . Don't over mix , it will be slightly lumpy. Pour batter into a lightly greased and preheated waffle iron , about 4 -5 Minutes until golden brown.

Directions Grits : Bring two cups of water and two cups of milk to a rolling boil, then add grits along with two table spoons of butter , reduce heat to low , cover and cook for 15 to 20 minutes, be sure to stir occasionally . While grits are cooking , rinse one to two pounds of shrimp ( peeled, deveined with tail on) , drizzle with olive oil and then sprinkle entire seasoning pack and coat shrimp , heat a medium non stick skillet, melt one half stick of butter add shrimp cook on medium heat until pink. Add Grits to serving plate and add cooked shrimp , for a delicious meal that your family will most definitely want more of.
Tip for thicker Grits decrease water for thinner grits increase water.
